Your tasting tour begins with a creamy roasted latte at Bright Eyes, an industrial-style café right on the Hobart waterfront — you can’t miss it, it’s covered in glass and resembles a greenhouse more than a café — but it really kicks off at Spring Bay Distillery, where you’ll enjoy a personalised tour with a tasting flight of single malt whisky and gin.
Continue to the home of the ‘World’s Best Single Cask Single Malt’, as voted in the 2019 World Whiskies Awards, Sullivans Cove, before a gourmet lunch of true Tasmanian taste sensations at the dreamy Frogmore Creek, complete with a self-guided tasting of the winery’s highly acclaimed cool-climate wines.

Historic Twilight Cruise — Experience Hobart’s glistening waterfront like never before
Prepare to be swept away over two magical hours with a twilight sailing experience onboard Hobart’s oldest and smallest working tall ship, SV Rhona H. More than just a boat ride, this cruise promises an authentic sailing experience where you can set the sails, steer and be part of the crew.
If you’re lucky, you may also get to watch local club races and see the boats return to the marina as the day melts into breathtaking night. Throughout this incredible experience, you’ll enjoy light refreshments.
Please ensure you arrive in Hobart in time for your twilight cruise on Day 1 (prior to 4pm). Guided touring is included on Day 2 only. You may depart any time that suits on Day 3.

Day 1: Arrive in Hobart, Tasmania
Fringed by wilderness, perched on the edge of a beautiful harbour and packed with world-class art and epicurean discoveries, Hobart is easy to fall in love with. Home to wine and cocktail bars, one-of-a-kind cafés, world-class restaurants, art galleries and picturesque cobblestoned streets, it is a magical destination.
On arrival at Hobart Airport (HBA), make your own way to Crowne Plaza Hobart, an IHG Hotel, a sophisticated launchpad within the heart of Hobart. As dusk begins to fall over this treasure trove of produce and world-class architecture, walk down to Elizabeth Street Pier and board the heritage SV Rhona H for your 6pm twilight cruise.

Day 2: Hobart
With an entire day of bespoke whisky tasting and historic architecture before you, there’s no better way to kick off the morning than with buffet breakfast at Crowne Plaza Hobart, an IHG Hotel. After you’ve pondered the mouthwatering selection of classics, make your own way down to Brooke Street Pier to meet your host and guide at Bright Eyes café for 9am.
Pull up a seat in this industrial-style café and sip a smooth roasted latte as you listen to your guide give you the day’s run down. Before you’re completely hypnotised by the glistening waves rolling towards the pier, you’ll be whisked away for your first tasting at Spring Bay Distillery for 10.15am.
Enjoy a personalised tour and tasting flight of gin and three single malt whiskies, including one straight from the barrel, before you continue to Sullivans Cove for your 11.15am whisky paddle. Sullivans Cove offers a small-batch whisky experience where you can taste traditional methods and 100% Tasmanian ingredients.
Forging ahead, Frogmore Creek beckons. Enveloped by dreamy vines and sprawling hill-scapes, this world-class winery will treat you to true Tasmanian taste sensations with a gourmet lunch at the restaurant, complemented perfectly by a self-guided tasting of Frogmore Creek’s highly acclaimed, cool-climate wines.
2.30pm signals the beginning of another tasting at Shene Distillery. Overflowing with 200 years of heritage, it’s not surprising that the buildings are as bold, beautiful and proud as Tasmania’s only triple distilled whisky. Begin your tasting with a tour of the historic buildings before raising a dram with guided tastings of whisky and gin.
Visit the 150-year-old, multi-award-winning Lark Cellar Door and Whisky Bar, nominated as one of the top four whisky producers in the world at the International Wine & Spirit Competition 2020, for your final tasting of the day. Once a distillery and bond store, the cellar door is now a whisky bar on the Hobart waterfront serving Tasmania’s first single malt whisky.
Nurse a tasting of classic cask dram of whisky or a gin (and tonic) to finish before making your own way back to Crowne Plaza Hobart, an IHG Hotel (approximately a seven-minute walk).
