Witness an underwater world as it comes to life when night falls with this Aquarium by Twilight and dinner experience. Your booking will have an after-hours guided twilight tour through ten tropical ecosystems, from mountains to the Great Barrier Reef. Come face-to-face with the Coral Sea’s predators of the night as you dine at Dundee’s for an all-you-can-eat gourmet banquet surrounded by the aquarium’s largest display tank. - Grilled Halloumi: Locally made Gallo halloumi, served with baby spinach, cherry tomatoes, chopped macadamia nut and red onion salad, with honey syrup
- Chilli Calamari: Dusted calamari in chilli seasoning served with lime mayo
- Crocodile Spring Rolls: Crocodile mince, rice noodles, julienne vegetables; rolled in spring roll pastry with Ooray plum sauce
Course Two (choose one):
- Black Angus Sirloin: Creamy mashed potato with sautéed leek, spinach, wild mushroom, shiraz jus and truffle mayo
- Barramundi: Pan seared with potato galette, broccolini and champagne sabayon
- Pumpkin Penne: Roast pumpkin, balsamic onion, semi-dried tomato, black olives & baby spinach tossed with penne pasta and pesto sauce
Course Three (choose one):
- Bailey’s Lamington Trifle: Lamingtons soaked in Baileys, layered with white chocolate custard mousse & strawberry compote
- Pineapple and Coconut Tart: Chilled creamy pineapple and coconut filled shortcrust pastry topped with mini marshmallow meringue, creme anglaise and coconut sorbet
- Chocolate and Kahlua Tart: Chocolate Kahlua ganache tart, chocolate gelato and praline
