Bannisters has opened the doors to its brand-new $15million property in Port Stephens.

Nestled into Soldiers Point, Bannisters at Port Stephens offers beautiful waterside views, a Terrace Bar with infinity pool and a seafood restaurant from iconic celebrity chef Rick Stein. Here, foodies can tuck into delicacies including fresh oysters, salmon sashimi, rib-eye steak and classic fish pie.
“Needless to say, the abundance of top-quality seafood has been a massive attraction to me – and the fact that the area is so close to the Hunter Valley wineries,” says Rick, who worked closely with his wife Sarah in picking the new location for his restaurant.
“For us, it’s another beautiful stretch of New South Wales coastline, like Mollymook, and we can’t wait to be working again with General Manager Peter Bacon and Commercial Director, Alice O’Hara. I will be working closely with Head Chef Mitchel Turner, designing a menu featuring local king prawns, yellowfin bream, flathead, calamari and school whiting, not to mention the fabulous oysters.
“I am enjoying that the kitchen has been designed from scratch and Sas is loving working again with Romy Alwill on the restaurant’s interiors with its high ceiling and sensational views.”
The new Bannisters is certainly a foodie’s paradise, offering also the Terrace, with its tapas-style light bites, and The Tavern, serving traditional pub-style delights.
Guests will also love the Terrace’s infinity pool, which offers tranquil views over Soldiers Point.
As for the accommodation, those staying in Paperbark Rooms will enjoy bushland views from their balcony, while Ocean Deck Rooms offer beautiful water views. Those wanting to really treat themselves can opt for a luxurious Studio Suite.
Pete Bacon, general manager, says the Port Stephens expansion was a no-brainer for the Bannisters brand.
He explains, “There is so much potential in the Port Stephens area and it is a natural progression for us to take a formula that works and replicate it.”
