Ton a engag\u00e9 le chef Chatchawan &#8220;Banky&#8221; Varahajeera \u00e0 Samut (signifiant oc\u00e9an) pour mettre en valeur les fruits de mer de Phuket.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Samut utilise \u00e9galement des ingr\u00e9dients locaux comme des fleurs de l&#8217;\u00eele et des sp\u00e9cialit\u00e9s du sud \u2013 le crabe des boues est servi baign\u00e9 dans un riche curry jaune, tandis que le homard de Phuket est assaisonn\u00e9 de coriandre, servi avec des raisins de mer et du chou fris\u00e9. C&#8217;est une tendance de localisation c\u00e9l\u00e9brant la cuisine du sud, savour\u00e9e dans des \u00e9tablissements comme Royd et Laad. Ce dernier met en vedette Steve Doucakis, un jeune chef am\u00e9ricain qui a travaill\u00e9 chez Quince \u00e0 Bangkok.
