  • Course 2: Wood-fired flatbread; fava bean hummus, parsley oil and dill; Spiced lamb cigars and whipped tahini; David Blackmore bresaola, goats curd, truffle and pan fritto
  • Course 3: Wood-roasted Sydney Rock lobster and saffron butter; Northern NSW ribeye, wood roast cabbage and bagna cauda; Soft leaves, eschallot vinaigrette
